Slow Cooker Cheesy Scalloped Potatoes

If you are looking for a flavorful, filling, and easy comfort food recipe, this slow cooker cheesy scalloped potatoes is the perfect side dish. Layered potatoes are topped with a creamy mixture, spices, and shredded cheese, making this recipe simple to put together and even easier to cook. Just set it and forget it.  

I love a good, scalloped potato dish. There’s something about the creamy cheese sauce and the potatoes that just makes my mouth water. And while I could certainly make this dish the traditional way, using just heavy cream and seasonings, we did add cheese. This really makes this more into an Au Gratin type potato side dish.

Additionally, this same recipe can be baked in the oven as a casserole dish, I’ve started making it as a slow cooker recipe instead especially when I am cooking for a crowd. It is less stressful for me, and it saves space in my oven.  This way, I can have a delicious, hearty side dish that everyone will gobble up with a little prep and no stress.

Simple Ingredients for Cheesy Potatoes

Since there is cheese being added to the scalloped potato recipe, it does resemble more of an Au Gratin potatoes recipe. Either way, this is one of those delicious potato recipes that our family loves.

We have a hard time not adding cheese to recipes. This is a budget-friendly simple recipe with just a few ingredients Heavy Cream, Garlic, Dried Thyme, Nutmeg, Potatoes, Salt, Black Pepper, Cheese, and Parmesan Cheese.

Different blends of cheese melt perfectly with the potatoes and cream for a great side dish you will want to make all the time. We have used Gruyere cheese, cheddar cheese, Swiss cheese, Muenster cheese, or cheese blends from the grocery store. Each one adds a slightly different flavor to the side dish recipe.

This recipe works well for many potato varieties here are a few ideas, Russet potatoes, Yukon Gold potatoes, and red potatoes.

Make sure to slice the potatoes 1/8-inch thick or thinner. They will be sure to cook through and layer in the container for a pretty presentation. Using a Mandoline slicer makes this an easy side dish recipe.

How to Make Cheesy Scalloped Potatoes

It just takes a few minutes of preparation to make this great recipe for a hearty and comforting side dish. You just alternate layers of potato slices with layers of the creamy sauce. Sprinkle on salt and pepper and shredded cheese between each layer.

Spray 4- to 6-quart slow cooker with nonstick cooking spray for easy clean up. Or use a liner. In a saucepan, on medium heat warm the heavy cream, garlic, thyme, and nutmeg just to simmering. Remove from heat.

Layer one-third of the sliced potatoes in overlapping pattern to bottom of the slow cooker. Pour one-third of the cream mixture over the layer of potatoes; sprinkle with one-third of the cheese. Repeat twice for a total of three layers of potatoes, cream, and shredded cheese.

Cover and set the cooking time on High 5 hours, Low 7 hours, or until potatoes are fork tender.

Sprinkle the shredded parmesan cheese on top of the potatoes. Cover and let stand 5 minutes until the cheese melts. This will also allow the creamy cheese mixture to thicken slightly.

If you happen to have a bit of fresh thyme, it would be wonderful to sprinkle a bit on top before serving. It really helps take this classic side dish recipe over the top.

How Long are Cooked Potatoes Good for?

Once baked, let the potatoes cool to room temperature; however, no longer than two hours. Place in an airtight container and refrigerate or freeze. They will last up to 5 days in the refrigerator and up to 10 months in the freezer.

How to Tell if Potatoes are Bad?

The first telltale sign is the smell. They will have a foul, rotten smell. Visually, look for any soft, mushy, or moldy white spots on the outside of the potato. If they small bad and look bad toss out.

Why are potatoes still hard in slow cooker?

If you find that your potatoes are still slightly hard after being cooked in a slow cooker, it is because they have not heated through enough to cook. Therefore, vegetables such as potatoes and carrots should be cooked a bit longer, cut smaller, and liquid should be added when using the slow cooker.

How to Store Scalloped Potatoes?

These will store well in the refrigerator for up to 5 days in an airtight container. This is also a perfect side dish to freeze. Once in the airtight container, it will keep in the freezer for up to 10 months for best quality.
When you are ready to serve, reheat in the microwave or place in a casserole dish and reheat in the oven. A slow cooker would work well to reheat this too, it will just take longer.
