This side dish is packed with broccoli, cauliflower, carrots, and whatever vegetable you enjoy, oh, and cheese. For us, the cheese takes veggies over the top all the time. Best of all, it takes just minutes to prepare.

As the butter and cheese melt and combine, it creates a tasty cheese sauce. Take simple ingredients add a cheesy sauce and that spells Yum for us as it is one of our favorite recipes.

This is truly one of those dump and go side dishes. It is so simple to layer the vegetables, cheese, and butter. Set the temperature and timer and walk away. It is the best way to make side dishes and I think I need to find even more ways to utilize my slow cooker.

Clean up Tip: For easier clean up, spray the bottom and sides of the slow cooker with non stick cooking spray. You could also use a slow cooker insert and just toss it after.

Here is how easy it is to make this easy recipe.

Add a bag of frozen vegetables, sprinkle on shredded cheddar cheese or a nice four cheese blend, and a few tablespoons of butter.

Continue adding layers of veggies, cheese, and butter until you have the slow cooker as full as you would like it.

After a few hours of cooking, mix everything right in the slow cooker. Let it continue to cook until the vegetables are tender, and the cheese is melted.

Yes, they can. Frozen vegetables can be added to the slow cooker from frozen and cooked until they are fork tender. Since they are frozen, the cooking time will be longer than if you would be using fresh vegetables.

Here are a few more ideas for the perfect side dish using the slow cooker method.

I used a dinner vegetable blend and cauliflower and broccoli. Our family really loves eating the cauliflower and broccoli with this cheese, but I wanted a bit more flavor variety and color for this side dish today. Please feel free to turn this into a complete cheesy broccoli casserole or use another vegetable that you love.

It is best to use a bit of a sturdy vegetable like the cauliflower, broccoli, carrot in crockpot recipes as a something softer like a squash would get mushy rather quickly.

This recipe works great with a wide variety of cheeses. I used a Mexican four cheese blend today; however, a cheddar cheese, mozzarella cheese, Pepper Jack, or other cheese blend that is good for melting and taste would be a good choice.

If you want your cheese to coat the vegetables like a creamy cheese sauce even more, a can of cheese soup can be poured over the top of the vegetable mixture. Just stir in after the frozen vegetables have had a chance to thaw and cook a bit.

I do not add salt to this recipe. The butter and cheese already have salt added. However, if you prefer a little bit more salt add it.

If you like a crunchy topping, just before serving, I would add a cup of breadcrumbs or crushed crackers and 2 tablespoons of butter to a skillet. Heat on medium-high heat until the bread crumbs or crackers are toasted. Then take the lid off the slow cooker and sprinkle on the crunchy topping.

A quick no-cook crispy topping could also be crispy fried onions that can be purchased in a container from the grocery store. Sprinkle it on top right from the container.
