I had never had creamy cucumbers until my mother-in-law made them. She used milk and when that was paired with the cucumbers, it made for a watery salad. However, they did add a delicious flavor. Therefore, I tried my creamy salad dressing recipe and loved the results.

Sometimes there is a strong debate on which one to use. I have successfully used both the Miracle Whip and Mayonnaise in this recipe interchangeably. Use the one that makes you happy. Life is too short to stress over which one to use.

Which Cucumbers are Best for Salads?

I prefer using the English cucumber, which is mild, sweet, and virtually seedless. Normally, these cucumbers come wrapped in plastic at the grocery. The skin on these cucumbers is thinner and more fragile than the pole cucumber, which is generally what is found in gardens.

Along with the texture and mild flavor, his cucumber seems to have less water, which makes this a lovely choice for salads.

Do you Have to Peel Cucumbers for a Salad?

In general, if using English or Persian cucumbers, they do not have to be peeled as their outer skin in thinner. However, if you are using a pole cucumber that has a thicker skin that is also a bit bitter, then I would peel those.

If the cucumber is picked young and the skin is on the thin side, then you may also choose not to peel it. I would give the cucumber a taste first to see if the skin has a bitter taste before deciding whether to peel it.

How to Make the Creamy Cucumber Salad

It takes just three ingredients to whip up this quick salad.

Cucumbers. If I use the English cucumbers, there is no need to scoop out seeds or salt the cucumber slices ahead of time to let the excess water drain out. Sometimes, I peel the cucumbers all the way before slicing. Other times, I partially peel them. It really depends on the look of the salad for the day.

Miracle Whip or Mayonnaise. I use Miracle Whip Salad dressing. However, as I mentioned, you can swap the salad dressings interchangeably in this recipe or use Greek Yogurt.

Granulated Sugar. It just brings the whole salad together.

Make Ahead Garden-Fresh Side Dish Recipe – Easy Creamed Cucumbers

Make this side dish ahead of time. In fact, it is best if you can wait an hour or two before serving as the flavors will combine a bit better. Make sure to refrigerate.

Yes, it can be stored in an airtight container up to five days in the refrigerator. However, due to the water in the cucumbers, the salad dressing will have a thinner consistency. They still taste great though.

Ingredients

  • 1 Cucumber English cucumber peeled and sliced thinly
  • 2 Tablespoons Miracle Whip Make the tablespoons heaping
  • 2 Tablespoons Granulated sugar Make the tablespoons heaping

Instructions

  • The English cucumbers come in the shrink wrap plastic. Remove the plastic and peel the green skin or part of the skin.
    1 Cucumber
  • Slice the cucumbers. If some of the slices seem kind of big, you can cut them in half as well to make it easier to eat.
  • Add the Miracle Whip and Sugar. Mix the ingredients together.
    2 Tablespoons Miracle Whip, 2 Tablespoons Granulated sugar
