These are served at pretty much every potluck that I have ever attended. Not only are they easy to make, but people also really like them and pile them on their plates. Rarely are there any left at the end of the party.

Ingredients in This Delicious Side Dish

There are only six ingredients in these scrumptious hash browns. Often, I have these on hand for an easy meal for the family, when guests come over, on Sunday dinners, or Holidays.

If you are planning an Easter Brunch or Christmas breakfast, this is a perfect addition to the buffet.

Here are the six ingredients.

Real Potatoes. While I often take the time to grate russet potatoes on a box grater, the easiest way to make this recipe is using a bag of frozen shredded potatoes. You can also use frozen diced potatoes too. Just that the frozen potatoes first for even cooking throughout the casserole. I think tater tots would work well with this homemade hashbrowns recipe.

Cream of Mushroom Soup and Cream of Celery Soup. While I use these two soups, you can use cream of anything. Really, just about any cream soups that you happen to have on hand.

Milk. I like to use whole milk for creamier flavor. Since this is used with the cream soups, you can substitute this milk for 1% or 2% milk.

Cheddar Cheese. This cheese really has a nice bold cheese flavor that melts well. However, if you are looking to change up swap out some of the cheddar for another type of cheese. I like to shred my own cheese if I have time. However, if not, I don’t stress about it, just used the shredded cheese from the grocery. I know some folks prefer not to use this because of the cellulose. I have a bit more on this.

Mozzarella Cheese. Mozzarella cheese is a great melting cheese and delicious as a topping for this recipe.

Wow, that is it. That is all there is too this recipe. Just a few simple ingredients with amazing results.

Crunchy Topping Option

While this recipe today does not have the crunchy topping, it is very easy to add if you like that. Sometimes I make it with the topping and other times I leave it off.

Here is how you make the crunchy topping. Two cups of crushed corn flakes or crushed Ritz crackers mixed with three tablespoons of melted butter. Just sprinkle on top before baking. When the potatoes are hot and bubble and the top is crunchy, the side dish is ready to enjoy.

How to Make Baked Cheesy Hash Browns Casserole

To make this casserole simply add all the ingredients to a large mixing bowl except the shredded potatoes and a cup of the cheddar cheese and the mozzarella cheese. Stir it well until all the ingredients are combined.

Then add the shredded potatoes and mix again.

Spread the potato mixture in a prepared 9 X 13 baking dish. Add the shredded cheddar cheese and mozzarella cheese. Bake for approximately 30 minutes at 350 degrees Fahrenheit.

When the cheese is all melty and the potatoes are tender, it is ready for serving.

Mix the casserole together the night before adding to the baking dish, cover with plastic wrap and refrigerate. When you are ready to prepare, remove from the refrigerator, bring to room temperature and bake as directed.
