How to Make this Rotisserie Chicken Casserole

Delicious comfort food which contains chicken and noodles smothered in a creamy cheddar cheese garlic sauce.

Make this throw-together weeknight dinner recipe. You can make it ahead and freeze it or put it together and bake it right away. This dish is quick, easy, and kid-friendly, and takes just 40 minutes to make.

Here are the Minimal Ingredients

  • All-Purpose Flour
  • Onion
  • Garlic
  • Red Pepper Flakes
  • Salt
  • Pepper
  • Butter
  • Sour Cream
  • Milk
  • Cheddar Cheese
  • Mozzarella Cheese, I added this to the recipe it is not in the original recipe.
  • Cream of Celery Soup
  • Chicken cooked and diced. I like to use rotisserie chicken
  • Egg Noodles, cooked and drained

Easy Steps to This Recipe

In a large saucepan, melt the butter over medium heat.

Add the diced onion and sauté 1-2 minutes. Add the red pepper flakes, garlic, salt, pepper, and butter.  Cook two minutes more stirring occasionally.

Stir in the flour and cook until the flour is absorbed. Stir in the milk and 2 cups of cheese. Reserve 1 cup of cheese for casserole topping.

Once the cheese is melted add the chicken, sour cream, soup, and noodles into cheese mixture. Stir until the noodles are coated with mixture.

Pour mixture into a 9 X 13 baking dish prepared with cooking spray. Top with remaining cheese. Bake the casserole for 30 minutes, or until cheese is melted and sauce is bubbling.

Remove from oven and let cool slightly before serving.

Switch up the cheese. This recipe uses cheddar cheese, but any type of cheese that you enjoy would work. In casserole dishes like this good melting cheese really takes this over the top.

If you prefer a crumb topping crushed Ritz Crackers, bread crumbs, or even crushed potato chips mixed with melted butter work well. Just take approximately 1 cup of the crumb mixture that you want to use and mix with 2 tablespoons of melted butter. Sprinkle over the top of the casserole and bake.

Add vegetables right to the casserole. They are a great addition. I usually have some in the freezer and cauliflower and broccoli are great choices. Green peas and green beans can be added when the pasta is mixed in.

This makes a great snack for later and if it is in an airtight container, it will last in the refrigerator 4-5 days.

To reheat just microwave or place in the oven. Generally, we microwave this a few minutes as it is faster. Unless we are reheating enough for a crowd.

Can this Casserole be Frozen?

Yes absolutely, get the ingredients in a freezer-safe baking pan and make sure that it is securely wrapped in plastic wrap then tin foil. It will keep in the freezer 4-5 months.

When you are ready to bake it can go right in the freezer – just bake an extra 40 minutes to allow for the frozen state when it went into the oven.

If you thaw the casserole first, just bake for the normal time.

  • 3 Cups Chicken cooked and diced I like to use rotisserie chicken
  • 4 Cups Egg Noodles cooked and drained, approximately 2 cups uncooked
