Ingredients

  • 1 Tablespoon Instant Coffee
  • 2 Tablespoons Water Hot
  • ½ Cup butter
  • Cup Chocolate Chips divided, optionally use heath toffee bits
  • 3/4 Cup Sugar
  • 3/4 Cup Brown Sugar
  • 2 Large Eggs
  • 2 Teaspoons Vanilla Extract
  • 2 ½ Cups All-Purpose Flour
  • 1/3 Cup Unsweetened Cocoa Powder
  • ½ Teaspoon Baking Powder
  • ½ Teaspoon Salt

Instructions

  • In a microwave safe small bowl heat the water 1 minute. Add the instant coffee and let it dissolve. Set it aside.

  • In a medium saucepan, over low heat, melt butter and ½ cup of chocolate chips. Remove from heat and stir until smooth. Stir in instant coffee and let sit for 5 minutes until slightly cool. Add eggs, sugar and vanilla, stirring until well combined.
    ½ Cup butter, 1½ Cup Chocolate Chips, 3/4 Cup Sugar, 3/4 Cup Brown Sugar, 2 Large Eggs, 2 Teaspoons Vanilla Extract
  • Preheat the oven to 350F degrees. Prepare the cookie sheets. Line with parchment paper.
  • In a medium bowl, whisk together flour, cocoa, baking powder and salt.
    2 ½ Cups All-Purpose Flour, 1/3 Cup Unsweetened Cocoa Powder, ½ Teaspoon Baking Powder, ½ Teaspoon Salt
  • Add flour mixture to butter mixture, gently folding until just combined.
  • Fold in remaining chocolate chips.
  • Use a 1-inch cookie scoop and drop dough 2 inches apart onto prepared cookie sheet.
  • Bake for 10-12 minutes. Cool for 1 minute on pan and then remove to a wire rack to cool completely.
