We made these for the first time this year on our Christmas cookie baking day with friends and family. This year, we made cookies from great grandma Joy’s cookie books. We enjoyed trying a few new recipes and this one is a keeper. We swapped out the chocolate chips for Heath toffee bits and we also dissolved the instant coffee crystals in water before adding it to the heated ingredients.

Storage and Make-Ahead Tips
How to Store Cookies
Once completely cooled, store your chocolate truffle cookies in an airtight container at room temperature for up to a week. To maintain freshness, place a piece of parchment paper between layers of cookies.
For longer storage, freeze the cookies in a freezer-safe container for up to 3 months. Thaw at room temperature before serving.
Make-Ahead Cookie Dough
You can prepare the cookie dough in advance and refrigerate it for up to 48 hours. Be sure to cover the dough with plastic wrap to prevent it from drying out.
For even longer storage, scoop the dough into cookie balls, place them on a baking sheet lined with parchment paper, and freeze until firm. Transfer the frozen dough to a zip-top bag and store for up to 3 months. When ready to bake, simply place the frozen dough on a prepared baking sheet and add 1-2 minutes to the baking time.
Reheating for Freshness
To enjoy the cookies warm, reheat them in the microwave for 10-15 seconds. The chocolate chips will become melty and gooey, giving you that freshly-baked experience all over again.
