Years of Struggle Making Dumplings

For years, okay, decades, I struggled with my dumplings turning out sometimes and other times disintegrating into my soup and making the entire thing taste like flour. I searched cookbooks and watched cooking shows on the television intently trying to figure out what I was doing wrong. It was so frustrating that I gave up trying.

One day, I was at a potluck and a bunch of our women friends were sitting at a picnic table with my daughter and me. We were swapping really tasty and easy recipes that we would make for potlucks. I am not sure how we got on the subject, but one of our dear friends talked about her aunt’s torn dumplings.

Her aunt happens to own an eatery in town and in my option had the best food for banquets. It was full of homemade flavor and there was always enough for a crowd. When I knew that an event was going to be held at her establishment, I went. Yup, just to get her good food.

Anyway, she had shared her dumpling recipe with her niece, who, bless her heart, shared it with me! From the very first time, this recipe has made the perfect dumpling. We feel so lucky to have this recipe as it has turned out every single time I make it. It has become a family favorite. Now, I am going to share this simple recipe with you.

Our whole family is so happy we finally found this easy recipe for fluffy homemade dumplings. When I make chicken dumpling soup, everyone makes sure to come over to get some. It is gone in a flash and everyone enjoys it so much.

If you would like a bit more flavor or color, add a bit of chives, or a tablespoon of parsley flakes, cilantro, or pieces of cooked bacon. My favorite recipe to use these in is my chicken and dumpling soup. Feel free to experiment and find your favorite way to serve these; maybe a bit of beef stew needs even more comfort food taste.

Why did my dumplings dissolve in my chicken and dumplings?

For years I struggled with what causes dumplings to fall apart. It is such a simple dough yet finding that perfect recipe can be difficult. Here are the two things I have found to make all the difference in a successful dumpling. First, the addition of one egg holds all the ingredients together. The next most important step is to make sure that the liquid is boiling when the dumplings are added. Otherwise, they will fall apart in the liquid before they start cooking, which helps them bind together.

Can you Freeze Chicken and Dumplings?

Absolutely! In fact, if I plan on freezing chicken soup, I prefer to make an old fashioned chicken and dumplings soup for freezing. The dumplings hold up so much better than noodles. Just make sure to cool the soup before adding it to an airtight container and freezing. Note: I would not freeze the drop dumpling batter before it is cooked. Cook it first, cool it down, pack in an airtight container, then freeze.
