If you like sausage soup or kielbasa and cabbage soup, I bet you will love this recipe. A rustic soup that is budget friendly too.

For me, anytime a recipe involves cooked cabbage, I will probably like it. There is just something about it.

Soup Season

It’s soup season and that means it’s time to get creative in the kitchen.

In Wisconsin September means the beginning of soup season. We start to get cool nights and some cool days. Yet it is too soon to turn on the furnace, so we warm up with a delicious bowl of soup. And is full of all the flavors we love.  

Those cold winter days will be here soon.

I love soup. There’s something about a warm, delicious bowl of soup that just makes me feel good all over. Plus, it’s so easy to make a big pot and have leftovers for lunch the next day.

Cabbage Hot Dog and Potato Soup recipe

This hot dog soup recipe uses simple ingredients that result in lots of savory flavors. I wanted a hearty soup, and this is what I had available to use. The result was so delicious that this is now in my soup rotation. It has quickly become a family favorite

Ingredients:

Use a large soup pot as you’ll want to have enough for a few days.

Here is what I added: Olive Oil, Onion, Celery, Garlic, Red Potatoes, Natural Casing Hot Dog pieces, Green Cabbage, Corn, Chicken Broth, Parsley, Chicken Flavoring, Salt, and Pepper.

The hot dogs add a rich, smoky flavor to the soup. The vegetables provide lots of variety in taste in every spoonful.

We used fresh corn that we froze last fall. Our freezer has quite a bit of homemade chicken stock, so we used that too. This is a great recipe to use what you have on hand.

This nourishing bowlful is low carb too.

Swap Ingredients

This is a great recipe to swap ingredients in. If you happen to have green beans on hand add those too or in place of the corn.

Swap out the Hot Dogs, for Smoked Sausage, or a Spicy Sausage. Add white beans for even more health benefits in this simple soup.

Add in minced garlic or garlic powder for a richer flavor.

I diced raw onions; however, you can use onion powder or minced onion too.

Easy Weeknight Meal

With just a handful of ingredients this soup is packed with flavor that comes together quickly for a warm meal in a hurry. Full of veggie goodness, you’ll feel good about serving this to your family.

I often stock up on those family packages of natural casing hot dogs and put them in the freezer. They are great to have on hand for grilling in the summer. Use them for this soup too!

However, when school starts in the fall, it is wonderful to feed my family quickly when we all get home with easy meals. Everyone is happy when I make this soup.

It’s a filling meal that satisfies our hunger.

Slow Cooker Cabbage Soup with Hot Dogs

This is one of those soup recipes that works well in a slow cooker too. Just add all your ingredients and cook on high for 4 hours or low for 6 hours.

Refrigerating and Freezing Hotdog Soup

Refrigerate in sealed in an airtight container for up to 3 days. This is a great soup to freeze up to 3 months.

To reheat, I just reheat in the microwave one serving at a time.

I actually prefer the soup after it has been refrigerated a day. All the great flavors have had a chance to become even better.

Ingredients

  • 1 Tablespoons Olive Oil
  • 1 Medium Onion Diced
  • 2 Medium Carrots Peeled and Diced
  • 1 Stalk Celery Diced
  • 3 Tablespoons Garlic Minced
  • 3 Medium Red Potatoes Cleaned and Diced
  • 1 ½ Pounds Natural Casing Hot Dogs sliced into bite-sized pieces
  • 1 Small Head Cabbage coarsely chopped
  • 15.25 Ounces Corn 1 can drained
  • 6 Cups Chicken Stock or Vegetable Stock
  • 1 Tablespoon Dried Parsley
  • 1 Tablespoon Chicken flavor better than bouillon
  • Kosher Salt
  • Black Pepper

Instructions

  • In a large pot or Dutch oven add the olive oil, onion, carrots, and celery. Sauté for 5 minutes stirring occasionally.
    1 Tablespoons Olive Oil, 1 Medium Onion, 2 Medium Carrots, 1 Stalk Celery
  • Add the garlic and potatoes continue sauteing for 4 more minutes, stirring occasionally.
    3 Tablespoons Garlic, 3 Medium Red Potatoes
  • Add the stock, sliced hot dogs, cabbage, corn, parsley, and better than bouillon flavoring. Cover and bring to a boil. Then reduce the heat to medium-low, cover, and simmer for 15 minutes until the potatoes and cabbage is tender.
    1 ½ Pounds Natural Casing Hot Dogs, 1 Small Head Cabbage, 15.25 Ounces Corn, 6 Cups Chicken Stock, 1 Tablespoon Dried Parsley, 1 Tablespoon Chicken flavor better than bouillon
  • Turn off the heat and season with kosher salt and black pepper to taste.
    Kosher Salt, Black Pepper
