How to Make White Chocolate Chip Mocha Cookies

This white chocolate chip mocha cookies recipe is perfect for any coffee lover. This recipe is simple to follow and results in cookies that are crispy on the outside and chewy on the inside. The combination of instant espresso powder and cocoa powder really give these cookies a dark chocolate flavor with a hint of coffee.

Simple ingredients used to make these scrumptious cookies include butter, brown sugar, granulated sugar, eggs, vanilla extract, almond flour, unsweetened cocoa powder, instant coffee granules, baking powder, baking soda, salt, and white chocolate chips.

Quick and Easy Cookie Directions

In a large mixing bowl, cream butter, brown sugar, and sugar. Beat with an electric mixer until fluffy, about 3 minutes.

Add vanilla extract, and eggs one at a time, mixing well after each addition.

In a separate large bowl, combine the dry ingredients almond flour, cocoa, instant coffee, baking powder, baking soda, and salt. Add to butter mixture, mix until blended. Stir in white chocolate chips.

Drop cookie dough by rounded teaspoons or a cookie scoop onto prepared cookie sheet, greased or parchment paper lined baking sheets.

Bake for 12-15 minutes in a pre-heated oven at 350 degrees Fahrenheit. Check at the 12 minute mark and watch closely to determine when the cookie is done.  For best results, cool 5 minutes, before removing from cookie sheet to wire rack to cool completely.
