1CupButter 2 sticks softened
1CupBrown Sugar
1CupGranulated Sugar
2LargeEggs
2TeaspoonsVanilla Extract
2 ½CupsAlmond Flour or All-Purpose Flour
½CupUnsweetened Cocoa Powder
3TablespoonsInstant Coffee Granules
¾TeaspoonBaking Powder
¾TeaspoonBaking Soda

Instructions
In a large mixing bowl, cream butter, brown sugar, and sugar. Beat with an electric mixer until fluffy, about 3 minutes.
Add vanilla extract, and eggs one at a time, mixing well after each addition.
In a separate bowl, combine the dry ingredients almond flour, cocoa, instant coffee, baking powder, baking soda, and salt. Add to butter mixture, mix until blended. Stir in white chocolate chips.
Drop cookie dough by rounded teaspoons or a cookie scoop onto prepared cookie sheet, greased or parchment paper lined baking sheets.
Bake for 12-15 minutes in a pre-heated oven at 350 degrees Fahrenheit. Check at the 12-minute mark and watch closely to determine when the cookie is done. For best results, cool 5 minutes, before removing from cookie sheet to wire rack to cool completely.
Makes 2 dozen 2-inch cookies.
