Taco Skillet Bake

This taco skillet bake is packed with flavor and fresh toppings. If you have 40 minutes, you can have a delicious casserole in your cast-iron skillet in no time at all.

A Hint of Spice in our Comfort Food

We love to have a bit of spice in our recipes and when that is paired with a comfort food like a biscuit and fresh lettuce and tomato toppings, it is a flavor combination that we enjoy often.

It all starts with one refrigerator tube of canned biscuits. Everything else, just happened to already be in the pantry. I like my food quite a bit hotter than the rest of the family, so I add Sriracha Mayo on just my serving. That way, the rest of the family can enjoy their level of heat too.

Skillet Taco Bake Ingredients

Tube of Southern Homestyle Grands Biscuits. This can be any type of refrigerated biscuit.

Nacho Cheese Doritos. Just crush them up and top the baked biscuits. Save some for the topping too. So hard to resist the chips. Try different flavors too.

Taco Seasoning. Use 1 packet of seasoning or make your own.

Hamburger. Cooked and broken apart.

Onion. Diced and cooked.

Taco Sauce. I used mild and let people add tobacco or other hot sauce to their own portion.

Sour Cream. This adds a nice creamy base to the recipe.

Shredded Cheese. Use the kind that you like the best. Today I used Colby/Jack Cheese.

Green Onion. I sliced this thin and used it to garnish the top. Every once in a while, as you enjoy this taco bake, you get a bit of the onion and it adds the right amount of zip.

Tomatoes. I used fresh tomatoes cut up today. However, you could use salsa on top if you had it on hand.

Lettuce. It just seems to add the perfect fresh taste with a bit of crunch.

Overview of How to Make the Skillet Taco Bake

I used a 12-inch cast iron skillet. If you do not have one, that is okay, just find a skillet or other casserole dish that can go in the oven safely.

Cook and break apart the hamburger, taco seasoning, and add the onion. When fully cooked, remove from pan and set aside.

Clean the pan if anything stuck to it and start the next step.

Prepare the skillet with a light spray of oil or lightly butter the bottom and sides. It will help crisp the biscuits and allow the bake to come out of the pan with ease.

This is baked twice. The first time is to partially bake the biscuit base in the pan. There are eight biscuit pieces in the tube of Grands Biscuits. I used seven of them for the base and sides. The one biscuit that was left over, I ripped into pieces and placed on top for the second bake.

When placing the biscuits in the pan, I pulled them slightly and flattened them to make them larger. Then placed them side-by-side in the pan covering the bottom and about have way up the sides of the pan. One flattened biscuit placed in the middle filled the hole nicely. Press all the edges together and bake for 10-minutes.

While the biscuits are baking, mix the taco seasoning with the sour cream and crush the Doritos.

When the 10-minutes of baking is up, remove from the oven. Layer the following ingredients: crushed Doritos, hamburger mixture, half of the sour cream mixture, and half of the shredded cheese.  

Top with the pieces of the one unbaked biscuit. Bake for another 15-20 minutes.

Ingredients

  • 1 Package Southern Homestyle Grands Biscuits 8 count (refrigerator biscuits)
  • 2 Cups Nacho Cheese Doritos Crushed
  • 1 Packet Taco Seasoning

Instructions

    Open the tube of Grands Biscuits. I used seven of them for the base and sides. Save the 1 biscuit leftover.
    When placing the biscuits in the pan, I pulled them slightly and flattened them to make them larger. Then placed them side-by-side in the pan covering the bottom and about have way up the sides of the pan. One flattened biscuit placed in the middle filled the hole nicely. Press all the edges together and bake for 10-minutes.

  • Mix the taco seasoning with the sour cream, set aside.
  • Crush the Doritos, set aside.
  • When the 10-minutes of baking is up, remove from the oven. Layer the following ingredients: half of the crushed Doritos, hamburger mixture, half of the sour cream mixture, and half of the shredded cheese. 
    Top with the pieces of the one unbaked biscuit. Bake for another 15-20 minutes.
  • Remove from the oven and top with the rest of the shredded cheese, sour cream and taco sauce mixture, and crushed Doritos.
    Add lettuce, tomatoes, green onion, and anything else you can think of for topping ideas.
    If you like more heat, add some hot sauce too.
