  • 21 Ounces Lemon Curd or substitute a can of lemon pie filling)
  • 15.25 Ounces Vanilla Box Cake Mix 1 box, We used Pillsbury Moist Supreme, or pound cake or angel food cake mix
  • Powdered sugar for dusting, optional

Instructions

  • Preheat your oven to 350°F (175°C). Lightly spray an 8×8-inch baking dish with oil to prevent sticking.
  • In a large bowl, add the lemon curd to the cake mix. Stir until fully combined. The batter is very thick.
    21 Ounces Lemon Curd, 15.25 Ounces Vanilla Box Cake Mix
  • Transfer the mixture into the prepared baking dish. Spread it evenly using a rubber spatula.
  • Bake for 35-40 minutes, or until the top is slightly golden brown and set. Don’t overbake. Check with a toothpick at 35 minutes. If it comes out clean it is done.
  • Allow the pudding cake to cool before dusting with powdered sugar, if desired.
