Ingredients

21 Ounces Lemon Curd or substitute a can of lemon pie filling)
15.25 Ounces Vanilla Box Cake Mix 1 box, We used Pillsbury Moist Supreme, or pound cake or angel food cake mix
Powdered sugar for dusting, optional

Instructions

Preheat your oven to 350°F (175°C). Lightly spray an 8x8-inch baking dish with oil to prevent sticking.
In a large bowl, add the lemon curd to the cake mix. Stir until fully combined. The batter is very thick.
21 Ounces Lemon Curd, 15.25 Ounces Vanilla Box Cake Mix
Transfer the mixture into the prepared baking dish. Spread it evenly using a rubber spatula.
Bake for 35-40 minutes, or until the top is slightly golden brown and set. Don’t overbake. Check with a toothpick at 35 minutes. If it comes out clean it is done.
Allow the pudding cake to cool before dusting with powdered sugar, if desired.

If you want to make 2-Ingredient Lemon Bars, use a 9 x 13 baking pan for the recipe.

We used an 8 x 8 baking pan today, so the dessert turned out more like a sticky pudding cake. To keep this same cake-like recipe, double the recipe to make this in a 9 X 13 baking pan, increase the baking time 10 to 15 minutes.
