I first had these delicious scones at work. Whenever we had early morning meetings and training courses for larger groups of people, there would often be some sort of breakfast food. Coffee, juice water, fruit, yogurt, and these scones. I’m telling you; no one is excited to attend a training or early morning meeting. But once we knew these scones would be served, we made sure to get there early so we could enjoy one with our morning coffee. True story. Yes, they are truly that good!

Well, guess what? I was able to snag the recipe since I was the dean of the culinary program at that time.

Can You Use Frozen Strawberries to Make Scones?

For this scone recipe, I prefer to use fresh strawberries. In most recipes, you can swap frozen berries for fresh berries. However, I have found when making these biscuits that the frozen berries release too much liquid and the result is just not the same. So, I recommend using fresh strawberries for this recipe.

Ingredients

For the scones

  • 2 Cups All-Purpose Flour
  • 1/4 Cup Granulated Sugar
  • 1 Tablespoon Baking Powder
  • 1/2 Teaspoon Salt
  • 1/2 Cup Unsalted Butter cold and cut into small cubes
  • 1/2 Cup Heavy Cream
  • 1 Large Egg
  • 1 Teaspoon Vanilla Extract
  • 1 Cup Fresh Strawberries diced
  • 1 Tablespoon Milk for brushing on the top
  • ½ Tablespoon Coarse Sugar to sprinkle on the top

For the vanilla glaze, optional

  • 1 Cup Powdered Sugar
  • 1-2 Tablespoons Milk or heavy cream
  • 1/2 Teaspoon Vanilla Extract or lemon juice

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Prepare Dry Ingredients. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.

  • Cut in the Butter. Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.
