Just combine the flour, sugar, and butter and press it into a baking pan. This is the perfect amount of crust for a 9 X 9-inch baking pan or an 8 X 10-inch pan. You can use a food processor, but if you melt the butter, just mix this by hand. It just takes a few minutes.

While the crust is baking, work on the rhubarb filling mixture. Just add the cut up rhubarb, egg, sugar, and vanilla extract to a bowl and mix to combine.

When the crust is done baking, which takes just a short time, add the fruit mixture on top. Bake again and serve.

This is delicious, served warm and cold. Eat as is, or top with whipped cream or ice cream. It is a scrumptious combination.

Ingredients

Crust:

  • 1 ½ Cups All Purpose Flour
  • ¾ Cups Butter softened or melted
  • 8 Tablespoons Granulated Sugar

Rhubarb Topping:

  • 3 Cups Rhubarb Finely chopped
  • 2 Large Eggs beaten
  • ¼ Cup All Purpose Flour
  • 1 Cup Granulated Sugar
  • 1 Tablespoon Vanilla Extract

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a small bowl, add the flour, sugar, and butter. Mix until fully incorporated. You can use a food processor, but I just mix by hand.
  • Press mixture in a single layer into a 9 X 9-inch baking pan. A 8 X 10-inch pan will work too.
  • Bake 10 minutes until lightly browned.
  • While the crust is baking, in a medium bowl, combine the rhubarb, flour, sugar, and vanilla extract.
  • Spoon the fruit mixture onto the baked crust.
  • Bake another 30 minutes until lightly browned and set.
  • Serve warm or cold with whipping cream or vanilla ice cream.

While it is pretty easy to cut the bars right in the pan, you can line the baking pan with parchment paper before adding the crust. This makes it really easy to remove the entire dessert at once. It makes it much easier to cut into squares.
