- ¾ Cups Butter softened or melted
- 8 Tablespoons Granulated Sugar

- 3 Cups Rhubarb Finely chopped
- 2 Large Eggs beaten
- ¼ Cup All Purpose Flour
- 1 Cup Granulated Sugar
- 1 Tablespoon Vanilla Extract
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a small bowl, add the flour, sugar, and butter. Mix until fully incorporated. You can use a food processor, but I just mix by hand.
- Press mixture in a single layer into a 9 X 9-inch baking pan. A 8 X 10-inch pan will work too.
- Bake 10 minutes until lightly browned.
