It’s a family favorite. They love this dump and go chicken recipe. It has all the flavors of a Thanksgiving meal without all the hassle. My daughter calls this a discount holiday meal. So, what ingredients are in this recipe?
It’s an easy recipe that uses canned soup as a base rather than a Roux made of butter and flour with the addition of chicken broth.
For me, when I am tired from a long day at work and want to get the perfect meal on the table quickly, soup is faster. It makes a delicious creamy sauce.
Chicken. You can use uncooked chicken breast as I have today. In fact, I did not plan ahead, and my chicken was partially frozen. So, I sliced it about 1-inch thick so it would bake faster. This recipe is perfect for using rotisserie chicken. However, any type of chicken meat works for this recipe, breast, thigh, leg, and wing.
Soup. I used two cans of soup. A can of Cream of Onion and one of Cream of Mushroom. You could use Cream of Celery Soup in place of one of the soup flavors.
Chicken Stuffing Mix. One 6-ounce box of Chicken Flavor Stove Top Chicken Stuffing Mix for this recipe. It adds such a delicious savory full-bodied flavor.
Milk. Fill the soup cans with milk and add that to the soup mixture. It adds a delicious creaminess and helps make a saucy gravy. We use whole milk; however, you can use your preferred milk. Note. 1% and 2% or skim milk will have much less creaminess and flavor.
Onion. Adding this enhances the flavor profile and depending on what type of onion you add it may have an undertone of a subtle sweetness. It is not fried ahead of time; therefore, there is a slight bit of crunch, which adds to the texture of the dish.
Mozzarella Cheese. It is amazing how cheese just makes everything taste better. This dish is no exception.
Ingredient Variations.
Add a package of frozen veggies to the casserole. If you prefer a bit tangier taste, add a cup of sour cream to the mix. Use up Holiday leftovers. The leftover turkey and Holiday ham work well in this recipe.

How to Make Chicken Stuffing Casserole
Preheat the oven to 375 degrees Fahrenheit. Prepare a 9×13 baking dish with cooking spray.
Slice the chicken to 1-inch thickness and add to the casserole dish.
Slice the onion thinly and layer over the top of the chicken.
Add half the shredded mozzarella cheese on top of the onion layer.
In a separate bowl, add the cream of mushroom soup and cream of onion soup. Fill each can with milk and add that to the bowl. Pour in the bag of stuffing mix and stir to combine. Pour this over the casserole ingredients.
Sprinkle the remaining shredded mozzarella cheese on the top layer.
Bake uncovered for 45 minutes. It will be golden brown on the edges and cheese will be all bubbly and melty.
Remove from the oven and let sit for 15 minutes and serve.
