You don’t really need to rub the seasoning in, but you can pat the seasoning a bit to make sure it sticks to the meat. Let the steaks sit for 30 minutes. If you don’t have 30 minutes, that’s okay. This recipe will work for you. Resting the meat with the seasoning gives it a chance to start to penetrate the meat for more flavor.
Cook your meat. If you choose to use a skillet to fry, add a bit of olive oil to the pan. Sear the steaks on medium-high heat for about 2-3 minutes on each side. Lower the heat or place in an oven to finish cooking.
Add a tablespoon of butter on top and put the pan I the oven or cook on low flipping the meat once more. Cook per desired level of doneness.
- Rare 4-5 minutes, with an internal temperature of 110 to 120℉.
- Medium-Rare 6-7 minutes and 120-125℉.
- Medium 7-10 minutes and 130-135℉.
- Medium-Well 10-11 minutes and 140-145℉.
- Well Done 11-13 minutes and 150-155℉.
Allow steaks to rest 5 minutes before serving and slicing. This reduces the amount of juice lost when cutting into the meat.
Tent with foil to help keep the heat in.
This recipe will work for grilling your pork steaks too. Start off on the hot part of the grill over the coals for the 2-3 minute sear. Then move off the heat to the cooler part of the grill to finish cooking using the time and temperatures noted above.
