Make-Ahead Tips
If you're planning to make this soup ahead of time, we recommend preparing the soup without the noodles. This helps keep the texture just right, since pasta stored in soup tends to soak up the broth and become too soft or mushy.Let the soup cool, then transfer it to an airtight container and store in the fridge for up to 4 days. When you're ready to serve, reheat the soup over medium heat in a large pot or Dutch oven, then cook your regular lasagna noodles (or your preferred type of pasta) separately until al dente. Stir the fresh noodles into each bowl just before serving.
Freezing Instructions
For a freezer-friendly version, again leave out the noodles. Once the soup has cooled completely, ladle it into freezer-safe airtight containers or zip-top bags and freeze for up to 3 months. To serve, thaw overnight in the fridge or reheat directly from frozen over medium-high heat until hot. Meanwhile, cook your pasta fresh in a separate small pot and add it just before serving. This easy trick keeps your leftover soup tasting fresh and your noodles perfectly tender every time.💡 Helpful Tip: Cooking the pasta fresh when you plan to eat ensures the broth stays rich and the noodles don’t get soggy—making your reheated soup taste like it was made that day!
