This sweet potato burger bowl is the perfect combination of all the flavors of a juicy burger, but a little lighter. It has everything you crave. Seasoned ground beef, crisp lettuce, shredded cabbage for crunch, melted cheese, and a drizzle of Thousand Island dressing.

Instructions
Roast the sweet potatoes. Preheat your oven to 425°F (220°C). Toss the diced sweet potatoes with olive oil, salt, pepper, garlic powder, and smoked paprika. Spread them in a single layer on a parchment-lined baking sheet and roast for 20–25 minutes, turning once halfway through, until tender and slightly caramelized.

Cook the beef. While the sweet potatoes roast, heat a large skillet over medium heat. Add the ground beef and cook until browned and crumbly, about 6–8 minutes. Season lightly with salt and pepper. Drain any excess grease if needed.

Assemble the bowls. Divide the chopped lettuce and shredded cabbage among four bowls. Top with a scoop of the cooked ground beef, roasted sweet potatoes, and shredded cheese.
