Peel and Slice
Once cool, gently peel the shell of the hard boiled eggs.
Slice eggs in half lengthwise and remove the egg yolks. Place yolks in a large bowl for mixing the filling.
Dye the Egg Halves
Make the dye baths. Add the hot water, vinegar, and dye to small bowls or cups. Stir to combine.
1 Cup Hot Water, 5 Drops Food Coloring, 1 Teaspoon White Vinegar
Place egg halves (white halves only) carefully into the dye baths.
Let soak until the desired color is achieved—usually 1-3 minutes for bright colors.
Remove using a slotted spoon and place on paper towels to drain and dry.
For best results, let the egg whites sit until completely dry before filling.
Make the Deviled Egg Filling
Mash egg yolks with mayonnaise, granulated sugar, yellow mustard powder, salt, and pepper until smooth.
12 Egg Yolks, 3 Tablespoons Mayonnaise, 3 Tablespoons Granulated Sugar, 1 Teaspoon Yellow Mustard Powder, Salt and pepper to taste, Paprika for garnish, Pinch of fresh dill for garnish
Spoon the mixture into a piping bag or use a small spoon to neatly fill the colored egg whites.
Serve and Store
Arrange your colorful deviled eggs in muffin tins or on a festive platter.
Normally, deviled eggs are a great make ahead appetizer. Since these egg whites are colored, it’s best to store the colored eggs separate from the filling.I store mine in airtight containers with a piece of paper towel on top and bottom to soak up any excess moisture. Which can cause the dye to bleed. Also, store the same colors together in one container.Just before serving, add the filling and serve.Tip: Leftover deviled eggs should be eaten within 2 days for best flavor! Cover lightly with plastic wrap and store in an airtight container.
