Ingredients
1Box Stuffing Mixprepare according to package directions
28LargeMushrooms(2 1/2-inch-diameter), stemmed
1/3CupExtra Virgin Olive Oil
Parmesan CheeseShredded (optional)
Instructions
Preheat the oven to 400 degrees F.
Make the stuffing mix according to the package directions.
Drizzle a heavy large baking sheet with about 1 tablespoon olive oil, to coat. Spoon the filling into the mushroom cavities and arrange on the baking sheet, cavity side up.
Drizzle remaining oil over the filling in each mushroom. Bake until the mushrooms are tender, and the filling is heated through and golden on top, about 25 minutes. Serve.
If you like cheese like we do, when they are just out of the oven, sprinkle on a bit of freshly grated parmesan cheese.
Notes
The stems that are removed from the mushrooms can be finely diced and mixed in the stuffing mixture. This will increase the amount of filling and you will be able to fill more mushrooms. Add a bit of finely diced parsley for color.
