Ingredients
2PoundsCarrotspeeled and cut into thick slices (or use baby carrots)
3TablespoonsButter
1TablespoonOlive Oil
1/4CupBrown Sugarlight brown sugar or dark brown sugar
1/4CupOrange Juiceor maple syrup for extra sweetness
1/2TeaspoonSalt
1/4TeaspoonBlack Pepper
1/4TeaspoonGarlic Powder
Instructions
Place carrots in a large skillet over medium-high heat with a little water. I add only about a cup. Steaming the carrots will get them cooked quickly without having to pour out any extra water. The liquid will cook out quickly. Bring to a boil and cook for 5-7 minutes until slightly tender.
2 Pounds Carrots
In the same large skillet, melt butter over medium-low heat. Add olive oil, brown sugar, orange juice, salt, garlic powder, and black pepper. Stir to combine.
3 Tablespoons Butter, 1 Tablespoon Olive Oil, 1/4 Cup Brown Sugar, 1/4 Cup Orange Juice, 1/2 Teaspoon Salt, 1/4 Teaspoon Black Pepper, 1/4 Teaspoon Garlic Powder
Toss the tender carrots in the glaze ingredients. Cook over medium heat, stirring occasionally, for 8-10 minutes until a beautiful glaze forms and the carrots caramelize.
