Warm 1 tablespoon of olive oil in a medium saucepan over medium heat. Let it shimmer but not smoke.

Add the dry pearl couscous. Stir constantly for 2 to 3 minutes. You're looking for golden edges and a toasted fragrance that smells like warm bread.

Pour in the chicken broth and a pinch of salt. Drop the heat to low, cover tightly, and simmer for 10 to 12 minutes until the liquid absorbs completely.
