Instructions
Whisk together the pancake mix, eggs, and beer. Stir to combine.

Remove the corn kernels from the cob if using fresh corn. If using frozen corn thaw and drain off the liquid. For canned corn, drain the liquid. Add to the fitter batter and fold in the corn.
8 Cups Corn
Heat the oil in a large skillet. Add several tablespoons of corn batter to the hot oil. Fry on one side approximately 1 minute, turn and fry the second side. If it is not crispy and golden enough, continue frying a few seconds longer until the desired crispiness and color are achieved.
Drain on a paper towel-lined plate and serve while still hot and crispy.

Use a tablespoon to drop the corn fritter batter into the skillet.
