Instructions
Preheat oven to 350 degrees Fahrenheit.
First, wash and peel the sweet potatoes. Then dice into small pieces, about 1" cubes.

Place in a large pot and cover with about 1 inch of cold water. Cook over medium until the potatoes are fork tender.
Then, drain the sweet potatoes. Return to the heat and mash with either a potato masher or hand mixer on low.
Pro Tip. A simple recipe hack is to load the sweet potatoes into a food processor and process until smooth.
Add white sugar, light brown sugar, ground cinnamon, nutmeg, salt, vanilla extract, butter, whole milk, and eggs. Mash again very well.

Add the sweet potato mixture to a casserole sized baking dish.
For the topping, drop pads of butter on the top, sprinkle pecans and brown sugar over the top of the casserole.

Bake for 20 to 30 minutes until hot throughout and butter has melted and browned a little.
