Instructions
Prepare the Brownie Layer
Preheat your oven to 350°F (175°C). Line a 9x13-inch baking dish with parchment paper and lightly grease it for easy removal of the brookies.
In a large mixing bowl, combine melted butter and both sugars (granulated and brown) until well-blended.
1 Cup Butter, 1/2 Cup Granulated Sugar, 1/2 Cup Brown Sugar
Add eggs, one at a time, beating well after each addition, followed by the vanilla extract.
3 Large Eggs, 1 Teaspoon Vanilla Extract
Sift together cocoa powder, flour, baking powder, and salt in a medium bowl. Slowly add this dry ingredient mixture to the wet ingredients, stirring until just combined to make the brownie batter.
1/2 Cup Unsweetened Cocoa Powder, 3/4 Cup All-Purpose Flour, ½ Teaspoon Baking Powder, 1/8 Teaspoon Salt
Pour the brownie batter into the prepared baking pan and use an offset spatula to smooth the top of the brownie layer evenly.
Prepare the Cookie Dough Layer
In another large bowl or in the bowl of a stand mixer, cream together room-temperature butter, brown sugar, and white sugar until light and fluffy.
1/2 Cup Butter, 1/2 Cup Brown Sugar, 1/2 Cup White Sugar
Add the egg and vanilla extract, mixing until well-incorporated.
1 Large Egg, 1 Teaspoon Vanilla Extract
In a separate bowl, combine flour, baking soda, and salt. Gradually add this flour mixture to the butter mixture, folding it gently to avoid overmixing.
Finally, fold in the chocolate chips. Drop spoonfuls of this chocolate chip cookie dough onto the top of the brownie layer and gently spread to form an even layer of cookie dough.
1 Cup Semi-Sweet Chocolate Chips
Sprinkle a handful of chocolate chips on the top.
Bake the Brookies
Bake for 20-30 minutes, or until the cookie part turns golden brown, and a toothpick inserted into the brownie bottom comes out with only a few crumbs.
Allow the brookie bars to cool completely in the pan before lifting them out with the parchment paper.
Cut into small squares using a plastic knife or place them on a cutting board for easy slicing. For the best presentation, serve each piece with a scoop of vanilla ice cream.
Serving and Storing Your Brookies
This recipe yields about 20 brookie bars, depending on the size of the cuts. Store any leftovers in an airtight container at room temperature for up to 3 days, or wrap each piece in plastic wrap to freeze for up to a month.
