Cook the Sausage and Make the Gravy. In a large skillet over medium-high heat, brown the pound sausage until fully cooked. Use a slotted spoon to transfer the cooked sausage to a plate, leaving 2 Tablespoons of the drippings in the pan.

Reduce heat to medium heat. Add the butter. Once melted add the flour. Cook for 1-2 minutes and whisk to make a roux.
