Preheat the oven to 425 degrees F.
Remove the steaks from the refrigerator and let them come to room temperature for about 30 minutes. This helps the steak cook evenly. Pat the steaks dry thoroughly with paper towels, then season all sides of the steak generously with kosher salt and pepper. Set aside on a cutting board.
