16ozdry split green peasrinsed, can use yellow split peas too
6cupschicken brothor chicken bouillon and water
2stalks celerychopped
2carrotschopped or shredded
1smallwhite oniondiced
8ozbaconchopped
2tbspMaple Syrup
2tbspfresh parsleyor .5 tbsp dried parsley
½tbspItalian seasoningor to taste
¼tsppepperor to taste

Instructions
Chop the bacon, celery, onion and carrots into small pieces.
In a large frying pan, fry the onion, celery, carrots and bacon. Transfer the contents to a slow cooker. Add the broth, peas, salt, pepper, and Italian seasoning.
Cook on high for 4 hours or on low for 6-8 hours. Top with fresh parsley, croutons, and maple syrup if desired.
Reduce the cooking time to 60 -90 minutes.Cover and simmer the kettle. Stirring occasionally.
