Instructions
To make this casserole simply add all the ingredients to a large mixing bowl except the shredded potatoes and a cup of the cheddar cheese and the mozzarella cheese. Stir it well until all the ingredients are combined.
Spread the potato mixture in a prepared 9 X 13 baking dish. Add the shredded Cheddar Cheese and Mozzarella Cheese. Bake for approximately 30 minutes at 350 degrees Fahrenheit.

Sometimes I make it with the topping and other times I leave it off.Here is how you make the crunchy topping. Two cups of crushed corn flakes or crushed Ritz crackers mixed with three tablespoons of melted butter. Just sprinkle on top before baking. When the potatoes are hot and bubble and the top is crunchy, the side dish is ready to enjoy.
