This berry spring salad with maple vinaigrette is simple, fresh, and full of flavor that makes the taste buds happy. Spring and early summer is peak strawberry season here in the Midwest.
In a large bowl combine the spring mix, thinly sliced red onions, and sliced strawberries.
10 oz Spring Greens, ½ Red Onion, 2 cups Strawberries
Make the dressing by combining the Extra Virgin Olive Oil, Balsamic Vinegar, maple syrup, whole grain Dijon Mustard, salt, and pepper. Whisk to combine.
1/2 cup Extra Virgin Olive Oil, 1/4 cup Balsamic Vinegar, 2 tbsp Maple Syrup, 1 1/2 tsp Whole Grain Dijon Mustard, 1 tsp Salt, 1/4 tsp Black Pepper
Pour the salad dressing over the greens, gently toss to combine, and serve.
Fruit in salads is just delicious and today we used strawberries; however, there are a wide variety of fruits that are amazing in salads. Here are a few to try; peaches, pears, blueberries, raspberries, blackberries, apples, and mandarin oranges.Nuts such as chopped walnuts, pecans, pistachios, or almonds would add a nice nutty flavor and crunch to the salad.While the spring greens are full of delicious and tender flavor, other options or additions could be butter lettuce, spinach, and if you wanted a bit heartier leaf iceberg lettuce or cabbage could be added.Cheese on salads is another great option. Think about a fresh Parmesan, BellaVitano, Asiago, or a crumbled Feta cheese and how just a little would add to the taste.
