Peel and dice the cucumber and red onion and add those to a large mixing bowl. Dice the tomatoes, peaches, and sweet cherry peppers; add those to the bowl. Drain and rinse the black beans; add those to the bowl.
1 Cucumber, 1 Small Red Onion, 2 Cups Tomatoes, 2 Peaches, 16 Ounces Sweet Cherry Peppers, 15 Ounces Black Beans
Mix the salad dressing ingredients in another bowl, sweet cherry pepper juice, salt, pepper, sugar, rice vinegar, and olive oil. Pour the salad dressing over the salsa ingredients and mix to combine.

Peaches. Today, I had the fresh peaches on hand. However, if I did not, I would add a 14 ounce can of Peaches in Syrup. Just drain the juice making sure to reserve the juice for the salad dressing. Proceed with dicing the peaches for the recipe.Adding Heat. Sliced jalapenos, pepper flakes or a few shakes of hot sauce will add a lovely heat to this recipe if you prefer a bit more spice.Fresh Herbs. If you have fresh cilantro, parsley, or basil on hand dice up a small handful and add. This adds just a delicious fresh flavor to salsas.
